Mixed pho, salad and rare beef with lemon are the three representatives of Vietnam named in the list of the world’s best mixed dishes recently announced by the famous culinary website Taste Atlas.
Mixed pho was ranked 35th on the list by experts and readers of Taste Atlas. The famous website describes it as “a pho dish that is especially popular in the summer in Hanoi”.
Unlike the usual types of pho, mixed pho does not have the broth poured directly into the bowl, but instead is served with a distinctive rich sauce. The beef (or chicken) is sliced, marinated with salt, ginger, pepper, garlic, fish sauce and five-spice powder before being stir-fried.
Ranked 45th on the list, Nom (or Goi) is praised by Taste Atlas not only for being a delicious dish but also for being a testament to the art of balancing flavors and sophistication in Vietnamese culinary culture.
Taste Atlas describes: “Nom, also known as Goi in some regions, is a traditional mixed dish that stands out for its freshness, variety of colors and harmonious flavors.
This dish is usually a combination of many types of fresh vegetables and fruits that are shredded or thinly sliced such as green papaya, young mango, banana flower, carrot, cabbage, cucumber, sometimes adding white radish or herbs.
These ingredients are mixed well with sweet and sour fish sauce, creating a perfect balance between sour, sweet, salty and spicy flavors. In addition to vegetables, Nom also has shredded boiled chicken, shrimp, pork or dried beef to increase richness and nutritional value”.
Beef with lemon is the last representative of Vietnam to appear on the list at number 65. This is a traditional appetizer popular in Northern Vietnam.
Fresh beef is thinly sliced, rare with lemon juice to retain its natural sweetness. Then, the meat is mixed with onions, herbs such as coriander, basil, and sometimes shredded carrots to increase crispiness.
The sour, sweet, and slightly spicy dressing from lemon, fish sauce, garlic, and chili helps the dish to be flavorful and harmonious. Sprinkled with roasted peanuts and fried onions, beef with lemon is not only delicious but also brings a refreshing feeling, very suitable for hot summer days.
Established in 2015, Taste Atlas (headquartered in Zagreb, Croatia) is known as a map that gathers traditional dishes from around the world.
