If you think breakfast is just about food, wait until you try it while balancing on a swaying boat in the middle of a bustling river. At Cai Rang Floating Market in Vietnam’s Mekong Delta, there’s a unique morning ritual called bun lac — a noodle soup that locals enjoy while the waves rock the table (and sometimes your spoon). This is the story of how an American couple woke up at 4:30 AM to taste it — and why you might want to add it to your travel bucket list.

An Early Start for a Unique Breakfast

At 4:30 AM, while most people are still in bed, Alicia and Nate — a couple from San Diego, USA — began their day in Can Tho, Vietnam. The night before, they had made a five-hour motorbike trip from Ho Chi Minh City just to experience the legendary Cai Rang Floating Market.

Upon arrival, a local guide took them aboard a small wooden boat, weaving through a floating maze of merchants selling everything from fresh produce to coffee and steaming bowls of noodles. “It feels like a floating canteen,” Nate said, while Alicia marveled at the fact that the market wasn’t just for tourists, but a lifeline for local traders.

What is “Bun Lac”?

Their breakfast? The famous “bun lac” — a vibrant noodle soup served on a narrow plank between boats. Inside the bowl: tender pork, shrimp, cubes of pig’s blood, heart, liver, meatballs, and fresh herbs. The rocking motion of the boat added a playful challenge — “It’s like eating while doing acrobatics,” they laughed (learn more about Vietnamese noodle dishes here).

The name bun lac literally means “shaking noodles,” because diners must keep their balance as passing boats send ripples across the water. This dish has been featured on travel sites like Skyscanner and even impressed celebrity chefs such as Gordon Ramsay.

Beyond Breakfast: More Floating Market Wonders

The Cai Rang Floating Market itself was listed among the “Top 50 Most Unique Tourism Experiences in Vietnam” by VietKings in 2023. And for Alicia and Nate, the experience didn’t stop at breakfast. They later visited a 40-year-old traditional noodle workshop, and sampled coconut- and banana-based sweets at a nearby market.
